Inspired by classic European monastic cheeses, Benedictine is a semi-soft, washed rind cheese. Its orange rind, reminiscent of Munster, reflects its connection to the German word for monastery and showcases a heritage of traditional craftsmanship. Benedictine combines sheep, goat, and cow’s milk sourced from local small farms in Wisconsin. Once shaped into wheels, the cheeses are moved to an aging cellar where they undergo regular washing and turning throughout a twelve-week maturation process. We love Benedictine for the unique taste profile it shows. Mild and buttery toward the center of the wheel, it becomes a bit stronger and more pungent toward the rind. A new nibble in every bite!
