Origin Details Region: Santa Ana Volcano, El Salvador Varieties: Red Bourbon Altitude: 1300–1400m Process: Washed Behind the Coffee This coffee is sourced from small farms across the Apaneca-Ilamatepec mountain range, primarily on the fertile slopes of the Santa Ana Volcano. Farmers deliver ripe coffee cherries to the El Borbollon mill, operated by the Alvarez family, where the coffee is washed, fermented overnight and carefully dried to enhance sweetness and clarity in the cup. At every stage, quality is the focus. Water is recycled throughout the process, and after milling the beans are hand-sorted to remove defects and ensure consistency. The result is a smooth, approachable coffee with plenty of sweetness, gentle fruit character and a satisfying nutty finish.
