Our Brisket Loaded Baked Potato starts with brisket done properly, smoked low and slow for hours until tender, juicy, and full of deep wood-fired flavor. We bake medium - large russet potatoes until the skins are lightly crisp and the centers are soft and fluffy, then finish them with scallion butter while they’re still hot. For delivery, the potato stays wrapped in foil to keep the heat in, while the chopped brisket, sour cream, grated cheddar, pickled red onion, and sliced scallions are packed separately so everything arrives as it should. Build it with brisket first, then sour cream, cheddar, pickled red onion, and scallions. Rich and comforting, with just the right lift from the onion and scallions, it’s a proper brisket potato with balance in every bite. We only smoke a limited number of briskets each week, so once they’re gone, they’re gone.
