It’s no secret that the culinary world has always been a huge inspiration for our brewery and our beer recipes—we often put together ideas for our beers that either start in the kitchen or reflect trends from chefs we admire and gastronomically-focused friends we work with. This new midnight-black farmhouse ale has been composed the way we’d put together a special tasting menu, using a really beautiful eight-year aged balsamic, punchy El Dorado hops and both zest and juice from many, many pounds of fresh pomelo fruit added just before packaging.
