With mega marbling throughout and a huge eye of meat, this piece is one of the real standouts in the chillers currently! Due to previously working in a dairy, the beef has a unique flavour/texture profile that is just incredible. Aged for 60 days at TJB HQ this one is going to FLY! Simmentals are used extensively throughout Europe for their milk production. Once their time is up they are retired on pasture to lay down fat and grow to epic proportions - retired for up to 24 months, they become something truly incredible and this is no exception.
