Petty knife, Shirogami 2 with iron cladding, Migaki finish, Ikeda
This Petty is made by the legendary Yoshikazu Ikeda. He is the current chairman of the Sakai dentokogeishi (traditional skilled crafts)association. SHAPE: Petty. One of the smallest knives in a chef’s arsenal and good for well small things. STEEL: Shirogami (white) 2 steel. It is a reactive carbon steel which is easy to sharpen and holds an edge well. This steel is often chosen for traditional-style Japanese knives. Due to the non stainless nature of this steel care must be taken to dry the knives properly after use. FINISH: Migaki or polished finish. HANDLE: Octagonal wenge handle with a buffalo horn ferrule. BLADE LENGTH: 120mm and 150mm blade length.
