Chateau Chalon Vin Jaune, Domaine de Savagny
Chateau Chalon Vin Jaune, Domaine de Savagny About the Wine This remarkable Vin Jaune from the Jura is made from Savagnin grapes and matured for over six years in partially filled oak barrels under a veil of yeast, much like a fino sherry. Deep golden in colour, it offers an intensely complex bouquet of walnut, hazelnut, ripe yellow apple, warm spices and subtle vanilla. The palate is powerful, textured and extraordinarily persistent, with vibrant acidity carrying long smoky and nutty notes through the finish. A truly distinctive wine, it pairs beautifully with Comté Reserve, noble poultry and rich cream-based dishes. About the Producer Domaine de Savagny is located between Château-Chalon and Baume-les-Messieurs, in the historic heart of the Jura wine region. Established around two decades ago, the domaine works with vineyards planted on clay-limestone and marl-rich slopes, ideal for producing wines of depth and character. The estate follows the traditional Jura approach to ageing, maturing all wines in oak barrels and specialising in the region’s most iconic styles, including Vin Jaune and Vin de Paille. With patience, careful élevage and deep respect for local tradition, Domaine de Savagny crafts wines that beautifully express the singular character of the Jura.
