This is a 75cl bottle of dry white biodynamic wine made from 80% Petit Manseng and 20% Gros Manseng. It is manually harvested and undergoes spontaneous fermentation in barrels, followed by nine months of fine lees aging. The wine pairs well with oysters, fish, Roquefort cheese, sheep’s milk cheese, or country ham.
