A natural Geisha produced by Jhoan Vergara in Acevedo, Huila (Colombia). The Geisha variety is rooted in the Ethiopian town of Gesha and is prized for its aromatic finesse, here heightened by the natural process. Jhoan Vergara is the third generation of a coffee-growing family and took over the farm in 2018, converting it from commodity production to specialty varieties (Pink and Red Bourbon, Tabi, Java, Chiroso, plus experimental Sidra and Ombligón). He is also a cup-taster and roaster: in 2019 he won the «Master of Coffee» contest in South Korea. On the farm he uses a microbiology lab and techniques such as thermal shock to control fermentations.
