It opens with pale-gold reflections, fine bubbles, white fruit, citrus, and a clean mineral freshness. Light, precise, and crystalline, it brings the Katkoot ritual into a new form.WINEMAKING PROCESS: Katkoot 0.0 is crafted from Pinot Noir 70% and Chardonnay 30%. The alcohol is gently removed through a low-temperature vacuum process, preserving freshness, aromatic clarity, and balance. A small portion of white grape must is blended in to restore softness and harmony, before fine carbonation gives the beverage its elegant sparkling profile.
