Thomas Pico Butteaux Chablis 1er Cru-Thomas Pico originally worked in his family domain where he convinced his father to move to organic farming in the mid-2000s. He later trained with Alice de Moor before starting his own project where he also acquired his old family vines. The wines are fuller and more complex than your average Chablis as Thomas prefers to achieve full ripeness on the vine before extended élevage.
