2108, Absinthe Douce, 53% – 50 cl is a blanche absinthe inspired by a historical recipe from Couvet, in the Val-de-Travers. Its composition reflects a legacy from the period of absinthe prohibition, when clandestine distillation continued discreetly in the region, notably by the distiller known as Mère Leuba. At 53% ABV, it presents a composed and accessible profile without sacrificing complexity. Prepared with cold water according to the traditional ritual, it develops a smooth louche that reveals the subtle interplay of its many botanicals. Built from a complex formula of fifteen botanicals, this absinthe reveals a layered and harmonious structure. Its perceived softness echoes the calm character of the Sucre, the small river that flows through Couvet, while fresh anise and refined herbal notes bring depth and aromatic balance.
