Southern Georgia Collard, also known as Georgia Southern or Creole, is a classic heirloom variety that has been a cornerstone of Southern cooking since before 1880. These plants produce large, broad leaves on sturdy upright stems, reaching a mature height of 24 to 36 inches. The leaves are a rich blue-green color with a smooth, slightly waxy texture that holds up beautifully during cooking. Unlike heading cabbages, collards grow as a loose rosette of individual leaves, making them easy to harvest over a long season. The flavor is mild and cabbage-like with a subtle sweetness that actually improves after exposure to a light frost. This makes Southern Georgia Collard an excellent choice for extending your harvest well into fall and even early winter.
