Myth begins with carefully selected ripe Red and Yellow Caturra cherries from El Vergel Estate in Fresno, Tolima, Colombia, where producers Elías and Shady Bayter have spent years exploring innovative approaches to coffee cultivation and processing. The cherries undergo a 48–60 hour anaerobic fermentation, followed by a carefully controlled natural drying process. The result is a coffee with remarkable complexity and a vibrant fruit character—think passion fruit, strawberry and tropical fruit, balanced by citrus, cacao, coconut and honey. The coffee is then decaffeinated using the EA Sugarcane process at Descafecol in Manizales, Colombia. Instead of synthetic chemicals, naturally derived ethyl acetate from sugarcane is used to selectively remove caffeine. The process is designed to preserve the coffee's natural aromas, flavors and soluble compounds, leaving the beans 99% caffeine-free.
