Varietal: Yellow Sudan Rume Farm: Jardines del Edén Altitude: 1800 m.a.s.l Drying hour: 180 Temperature: 12-28 C° Annual Rainfall: 1900-2200 Cupping Score: 89+ Taste notes: Lemongrass, Vanilla, Red Fruits, Brown Sugar Processing notes: This coffee was exposed to a dry aerobic fermentation of 24 hours before being placed inside Grainpro bags for 50 hours at a temperature below 22ºC. Then the whole cherries were placed on raised beds until 11% moisture content was achieved. Origins of this coffee variety: This micro-lot is 100% Rume Sudan. A rare Sudanese coffee found in the high plateaus of Sudan. It is resistant to diseases, its yield is medium. Its body morphology is characterised to be tall, with large elongate-shaped cherries, big and wide dark green leaves. Yellow Sudan Rume is a really rare variety.
