Raised in a coffee-producing family, Santiago grew up immersed in coffee farming before pursuing a career in specialty coffee. After studying at Colombia's national vocational training institute, SENA, he worked across the industry before returning as an instructor in cupping, roasting, and barista skills. Drawing on years of experience and a deep connection to his family's coffee heritage, Santiago returned to farming to create Cultivares Farm alongside his parents. Today, the farm focuses on producing distinctive coffees from exotic varieties, combining traditional farming practices with the knowledge and precision gained through Santiago's specialty coffee career. About the processing: 1. Harvesting: Selective hand-picking of ripe cherries. 2. Floating: Removal of under-ripe and defective fruit by floatation. 3. Anaerobic fermentation: Cherries fermented in sealed bags for 92 hours. 4. Depulping & oxidation: Depulped and held in sealed bags for a further 72 hours of oxidation. 5. Washing: Coffee is washed, leaving approximately 75 % of the mucilage intact. 6. Drying: Dried on raised African beds for 10 days.
