Level Ground co - Aprocomsa - Honduras
APROCOMSA is the Fairtrade-certified arm of COMSA, and the process behind this coffee is one of our favourites to talk about. It starts with picking — the cherries are only harvested once they're 100% ripe, no shortcuts. From there they go into barrels of water for 48 hours, which helps sort out the best grains. Then comes the part that makes this a honey process: the beans are pulped without water, cutting down on water use and helping protect the environment. Once pulped, they head to a solar drier, where they're moved every 15–20 minutes for the first few days, then every half hour, slowing down further as they dry out — the whole thing can take up to 21 days. The result is a cup with notes of raspberry, plum and honey. A quick note — due to a delay with the green beans, we've had to change the coffee, so the information in the booklet is now incorrect. We're really sorry for the mix-up! All the correct information is on this product.
