The cherries spend 48 hours fermenting whole with an inoculated LAB microbial culture before moving into a dark room for 14 days of drying. That combination shifts the cup away from a straightforward natural profile and into something more layered: bright red fruit at the front, with a deeper, vinous quality unfolding through the finish. The producers Ratnagiri Estate is led by Ashok and Divya Patre, whose work pairs generations of coffee cultivation with a considered approach to fermentation, drying and lot separation. Across the estate, different varieties and processing methods are explored independently, allowing each lot to offer its own interpretation of the same place.
