100% Merenzao, also known as Trousseau. Grown on steep, terraced slopes in Ribeira Sacra, this relatively uncommon Galician red combines fragrant wild raspberry, red cherry, and black cherry with violet, dried herbs, and gentle spice. The palate is fine-boned and energetic, with bright acidity, delicate tannins, and a light touch of oak that adds texture rather than overt sweetness. Granite and slate soils, high-altitude sites, and the naturally delicate character of Merenzao give the wine a lifted, savory profile. Food pairing: roast duck, grilled quail, pork tenderloin, or wild mushrooms with thyme.
