Pollack Steaks

While Cod continues its stock challenges, may have moved over to Line Caught Pollack as a great alternative. With these individual steaks carved off the frame of 3-5kg fish, you'll have 2 x 140g Steaks in a pack. A suggestion we always make is to take them out of the packet a few hours before cooking and salt them with coarse salt for 2-3 hours. It will extract some of the moisture, intensify the flavour and leave the most delicious texture once cooked. Always cook 10% less time than you think.
