10Lightly Steamed Asamushi Sencha, Misty Mountain is harvested in Haruno village, a region of steep mountainous terrain in Shizuoka Prefecture. This area is home to the Mikura Formation—a layer of rock that was compressed on the ocean floor over the mind-boggling span of the Paleogene Period and later uplifted by tectonic activity—and is highly regarded as an ideal location for cultivating high-quality, premium tea. The Mikura Formation is rich in trace elements (minerals) essential for plant growth. The tea leaves, which have grown by absorbing the bounty of this soil, produce a rich, full-bodied tea with a high concentration of amino acids (umami components). Since the Mikura Formation consists primarily of “alternating layers of sandstone and mudstone” and “mudstone”—formed by the alternating deposition of sand and mud on the ancient seafloor—it provides an “exquisite balance of drainage and water retention” that fosters healthy tea roots.
