Origin: San Sebastian, Honduras Farm: Finca La Lagunita Producer: Ariel Rodriguez Altitude: 1,580 m Variety: Yellow Catuai, Lempira, Anacafe 14 Process: Natural Notes: Melon, Macadamia, Milk Chocolate Recommended brew method: Filter EduCafe is a family collective of over 40 producers based in the region of La Paz and Santa Barbara, Honduras. The heart of the collective consists of a tight knit community of family and friends who grew up together, and their goal is to raise the standard of educational and medical services to the children of the coffee communities in Honduras. Ariel's farms lay between 1,500 - 1,600 m.a.s.l, near the community of San Sebastian, La Paz, where his family have lived for generations. As a second-generation coffee producer, he is invested in raising the quality of his beans by implementing new processes and new varieties. From the EduCafe collective, Ariel is the first to offer coffees in three processes - natural, washed, and honey. This is our second year collaborating with EduCafe and Ariel. In 2025, we received his natural Pacamara. This year, we received this lot of Yellow Catuai, Lempira, and Anacafe 14. This blended lot, processed as a natural, gives notes of juicy melon, soft sweetness of macadamia, and milk chocolate.
