The Global Farm Metric Selection

This selection celebrates just some of the farmhouse cheesemakers who participated in our Global Farm Metric trial with Stonebeck Wensleydale, Ashcombe, Karst, Hafod and Baron Bigod. When we choose to work with a given cheese at Neal's Yard Dairy, flavour has always come first, but flavour has never been the only thing that matters, which is where the Global Farm Metric comes into it. To put it to the test, 12 farmhouse cheesemakers we work with spent the year trialling the framework. The most valuable outcome of the trial wasn't identifying the "best" farms, but recognising the commitment shown by the producers who took part. They invested significant time and energy, examining both the strengths and vulnerabilities of their farming system, and helped improve the assessment for future users.
