This is proper old-school Burgundy — elegant, earthy and beautifully expressive without ever feeling overly polished or flashy. Pinot Noir with real soul and a lovely sense of place. Domaine Tollot-Beaut has been making wine in Chorey-lès-Beaune since the late 1800s and was one of the first estates in Burgundy to bottle its own wines back in 1921. Today the domaine is run by cousins Nathalie, Jean-Paul and Olivier Tollot, continuing the family’s long-standing reputation for serious but wonderfully drinkable Côte de Beaune reds. The 2023 Chorey-Lès-Beaune comes from south-facing Pinot Noir vineyards planted between 1992 and 1998 on limestone, gravel and clay soils beneath the slope of Aloxe-Corton. Fruit from multiple parcels across the village brings a lovely balance of bright cherry freshness, floral lift and deeper savoury structure. Fermentation and élevage are handled with a light touch, allowing the vineyard character to stay front and centre. The wine spends around 15–18 months ageing in Burgundian oak barrels, with roughly 25% new oak, adding subtle spice and texture without overwhelming the delicate fruit.
