Valdespino Vermouth Origen is a Jerez vermouth built around the longstanding connection between Valdespino’s sherry wines and The Macallan’s oak cask programme. Its base uses sherry wines specifically selected for seasoning virgin oak casks destined to mature The Macallan Single Malt, meaning the vermouth represents the first liquid to interact with these casks before their journey to Scotland. Inspired by a Valdespino recipe dating to the 1920s, Origen combines the character of Oloroso sherry with Moscatel and a selection of botanicals and spices. The result brings together citrus and spice with the oxidative richness of sherry, balanced by a measured bitterness and gentle sweetness. The maturation provides an unusual link between Jerez and Scotch whisky production. Rather than simply using an ex-whisky cask, Origen is connected to the beginning of The Macallan's cask journey, through the sherry seasoning process that prepares oak casks before they are subsequently used for whisky maturation.
