A hopeful harvest defined by perfect seasonal timing. Rain Harvest 2025 balances notes of roasted nuts, butter cookie, grapefruit, and subtle floral tones. After the dramatic global production drop of cacao in 2024, it was a deep relief to see cacao pods growing again on the trees. Rain Harvest 2025 was defined by perfect seasonal timing. The 2025 Harvest: Perfect Seasonal Timing Unlike in temperate wine regions, it’s rain—not temperature—that defines this origin. The cacao first flowered during one of Piedra de Plata’s driest late-year periods in recent records. Then, just as the young pods began to develop, the seasonal rains returned with exceptional intensity. As the pods matured, rainfall gradually declined again, allowing the fruit to finish ripening under increasingly dry conditions before harvest. 2025 Rain Harvest Tasting Notes For this edition, we chose to forgo conching, the process of mechanically churning the chocolate. In general, conching has the effect of aerating the chocolate and releasing volatile acids. Since the 2025 Rain Harvest revealed less acidity and subtler fruity and floral notes than previous years, our decision to not conch allowed us to maximize these aromas. The result is a distinctly chocolatey and nut-driven expression of Piedra de Plata. On the nose, it’s chocolatey with hints of roasted almonds. On the palate, it folds into notes of butter cookie, nut butter, berries, and subtle grapefruit, leaving for a chocolatey, nutty, mocaccino finish.
