A small, soft, unpasteurised cheese that develops in flavour and texture as it matures. When young, it is fresh and slightly tangy, with notes of crisp apple, lemon and cream. With age, the centre becomes softer and silkier, while the flavour grows richer, bringing hints of ripe pear, sweet butter and earthy straw. Its delicate, golden-orange rind is thin and gently wrinkled, with a soft, velvety surface. As the cheese matures, the colour deepens and the centre becomes increasingly creamy, offering a lovely contrast between the rind and the soft cheese within. The name honours William Eggleston, a Nottinghamshire farmer who lost his life during the Cheese Riot of 1766. He was not involved in the unrest but was caught up in the violence while trying to protect his goods. His story gives the cheese a connection to the local past, recognising the people and livelihoods that have long been at the heart of food and farming.
