La Betania
At 1,850 metres above sea level in Villa Hermosa, Tolima, coffee cherries mature slowly under shifting microclimates and volcanic soil. This extended development brings density to the bean, allowing for a cup that feels both layered and deliberate. This lot comes from Jose Wilmar Arredondo Martinez of Finca La Betania, whose work was recognised with first place in the Traditional Washed category at the 2025 Tolima Corazón Cafetero competition. It reflects a style of Colombian coffee that values precision where processing is used not to shape, but to reveal. The varietal, F7, is part of a newer generation of Colombian hybrids. While originally developed for resilience, it has begun to show a different side at higher elevations; one that leans toward structure, sweetness, and a distinctly clean profile. In the cup, the coffee opens with a bright, juicy quality, reminiscent of yellow nectarine with a light citrus edge. As it cools, the profile softens into red apple sweetness, before settling into a gentle, toffee-like finish. It is a coffee that moves with ease, carrying both lift and depth without excess.
