Hand-forged in Sakai, Japan by Yoshikazu Ikeda for the Ittosai Kotetsu brand, this 240mm honyaki gyuto is a Japanese chef's knife forged from Aogami #2 carbon steel and finished to a full mirror polish. Honyaki is considered the most technically demanding form of Japanese knife construction -- forged from a single piece of steel and differentially heat-treated. The process has a high failure rate, which is why honyaki knives are scarce and priced accordingly.
