Tasting notes A balanced white wine with bright grapefruit-like acidity and generous fruit character. Aromas of apricot, yellow peach, pie crust, and minerality unfold from the glass, followed by gentle honeyed notes and subtle oak nuances on the finish. The palate shows flavours of ripe lemon, red apple, and delicate toastiness, leading to a long and satisfying finish. Fresh yet layered, the wine combines clarity with depth and remains enjoyable for 3–4 days after opening. Food pairing White fish meunière, scallops sautéed in butter, grilled prawns, chicken in cream sauce, roast chicken, salmon en croûte, saikyo-yaki of Spanish mackerel, chawanmushi, tempura, grilled bamboo shoots, dishes with white miso, dim sum, Hainanese chicken rice, lemongrass chicken. Winemaking This is the first estate-made vintage from Kifutato Wines, produced from grapes grown in Hara Village, Nagano, at an altitude of around 1005 meters. The 2024 growing season was marked by warm days and cool nights, with relatively low rainfall, allowing the grapes to ripen steadily while retaining vibrant acidity. Each variety was harvested separately according to ripeness and vinified in different ways. Chardonnay and Pinot Blanc, along with Sauvignon Blanc, were whole-bunch pressed, fermented, and aged for 8 months in stainless steel tanks. Riesling and Pinot Gris underwent 2 days of skin contact before pressing, followed by fermentation in resin tanks and transfer to neutral oak barrels in the later stage of fermentation, where they were matured for 8 months. All components were fermented using a pied de cuve method and blended after maturation. Sulphites were added at 30 ppm before storage and a further 30 ppm before bottling. The name “Unwind” reflects the idea of relaxing at the end of the day, inspired by dandelions blooming in the vineyard and bees gathering around them — a wine designed for calm, unhurried moments.
