The Farm: Aquiares, meaning “land between rivers” and located on the lush slopes of Costa Rica’s Turrialba volcano, is one of the country’s most well-known and forward-thinking coffee farms, recognized for its commitment to sustainability and quality. The farm was originally founded in 1890 but was transformed in the 1980s by Alfonso Robelo, who reimagined it as a thriving, self-sustaining town where workers could own their homes and take pride in their craft. Today, under the leadership of his son Diego, Aquiares continues to push forward as a leader in specialty coffee, combining thoughtful agricultural practices with innovation in varieties and processing. The Varietal: This lot features Centroamericano H1, an F1 hybrid variety developed from Sarchimor and wild Rume Sudan, known for its strong disease resistance, high yields, and a refined, complex cup profile. Carefully grown in Turrialba’s ideal climate, this variety thrives with attentive agricultural management. The Process: The coffee is processed using a thermic fermentation method, where freshly harvested cherries are sorted, sealed in oxygen-free environments, and placed in sun-warmed greenhouses to encourage controlled, heat-driven fermentation over several days. After fermentation, the cherries are slowly dried and rested, allowing the flavors to fully develop.
