100% Yamada Nishiki This sparkling sake uses Mie Prefecture Yeast and first season rice from fields located within 12 miles of the Ito Syuzo brewery. Its high concentration of carbon dioxide coming from natural fermentation makes it fizz like champagne. This carefully hand-prepared sparkling sake has fine bubbles, formed in-bottle during secondary fermentation, which harmonize perfectly with its soft taste. This Sparkling Sake is made in limited quantities, only 300 bottles per year in Japan, due to the time and effort it takes to produce. It's a delightful mix of their original '鈿女' brand's sweetness.
