Organic Sparkling Wine 2023 Bundarra Farm Australia Produced by Bundarra Farm at Baileys of Glenrowan 779 Taminick Gap Rd, Glenrowan , Vic 3675 Varieties in Wine predominantly Cabernet 53% Cabernet, 25% Pinot Gris, 9% Greco Di Tufu, 7% Brown Muscat, 6% Other Wine Maker : Elizabeth Kooij/ Paul Dahlenburg Vintage Conditions : “The Cooler conditions has lifted aromatics and delivered a core a of juicy fruit which bodes well for a high quality range of wines across the board. “ Paul Dahlenburg Winemaking & Maturation : Grapes are destemmed and gently pressed to obtain high quality juice. The free run juice is fermented at a low temperature in tank, once fermentation is completed more yeast and sugar is added and a second fermentation which is called “The Charmat method” is completed in tank under pressure where the bubbles are trapped in the base wine. Once this has been completed it is kept at a low temperature and under pressure, then filtered and bottled – using a counter pressure filler -keeping all those bubble in! Tasting Notes: A refreshing sparkling with subtle white blossom and pear aromas. A fine bead on the palate with hints of green apples, citrus, a slight creaminess lead to a crisp dry finish ALC : 12% Barrel Aged : No Cellar Until : Drink now, young fresh and zesty !
