This dark roast features an organically grown Timor Hybrid peaberry from the lush highlands of East Timor. A peaberry occurs when a single seed develops inside the coffee cherry instead of two—something that happens naturally in about 2–4% of harvests around the world. Nature’s way of creating something a little unique, just like a graduate! Washed processing brings clarity and balance to the cup, while the Timor Hybrid—originally developed for its resistance to leaf rust—helped restore coffee production across the island after devastating crop losses. Today, this coffee is sourced from family farms organized through a cooperative of more than 20,000 small producers. Like graduation day itself, this coffee celebrates perseverance and possibility—perfect for celebrations, sunny afternoons, and the first taste of summer freedom.
