AEB-L stainless steel is best described as a stainless version of 52100-bearing steel. This alloy offers some of the finest, most evenly distributed carbide structure available, making for a razor-sharp edge that can also be maintained on quality whetstones Our brand new Powerhouse pattern of kitchen knives is named after the building we moved the knife shop into in late 2024. Serving as the original light and electric plant in Downtown Bloomington in the late 1880s, and transitioning to power the Bloomington Normal Streetcar system until the mid-40s. This three-piece set of knife patterns is designed as workhorse blades that will serve you well for years to come. This knife is ground with a beautifully thin edge, making it excellent for cutting and slicing. The gently sloping spine makes the tip needle-sharp and easy to index in the hand, while the gently curving edge creates a beautiful rocking blade for mincing. A satin finish excels at maintaining its appearance and food release even after years of use. The carbon steel will develop a bluish-grey patina over time, protecting it from rust and corrosion. The full tang handle is well-balanced and dressed in honduran rosewood with brass and bone white paper micarta spacers.
