Vineyard Fruit for this wine is sourced from our Coldstream Vineyard at Tokar Estate, one of the most historic and expressive sub regions of the Yarra Valley. Planted to the MV6 clone of Pinot Noir on its own roots and trained to a VSP trellis, the vineyard consistently produces low yields of under two tonnes per acre. The site’s soils and cool climate conditions produce Pinot Noir with depth of fruit, fine spice and natural structure, resulting in wines of both elegance and ageing potential. Winemaking Fruit was hand picked in the cool of the morning during the 2024 vintage. The majority of the fruit was destemmed and fermented in our 3000L French oak tank, while around 20% was retained as whole bunches and fermented separately in a stainless steel open fermenter to add aromatic lift and structure. Following fermentation, the wine remained on skins for seven days before being gently pressed and the parcels blended. The wine was then transferred to French oak barrels, with 33% new oak, where it completed malolactic fermentation and matured in our cellar for eight months prior to bottling. Sensory Analysis The wine displays a deep garnet colour with youthful purple hues. Aromas of dark cherry, blackberry and cranberry rise from the glass, layered with subtle spice and earthy complexity. The palate is generous yet refined, showing dark berry richness supported by fine, silky tannins that carry the wine through to a long and elegant finish. Balanced between delicacy and power, the wine is vibrant and expressive in its youth while also having the structure to reward cellaring for up to eight years.
