Library! — 2016 Cabernet Franc
90 Pts - Michelle Bouffard “A beautiful complexity with notes of mushrooms, cedar and moist earth that intertwine with aromas of raspberry and pencil lead. Firm and believing tannins with medium acidity that balances the fruit well. A very charming Cabernet Franc. Bravo.” Fruit was hand harvested at the start of November in 2016. The wine was fermented with natural yeast and took about a month to reach dryness. Ferments were punched down at least once per day. If any yeast appeared to be struggling the ferments were pumped over. Pressed gently after three weeks on the skins and settled in tank off heavy lees. The wine was put to barrel at the start of 2017 into neutral French oak barrels – chosen to highlight the perfect growing conditions of 2016 and the beautiful fruit harvested from the Foxcroft Vineyard. A dark and earthy Cabernet Franc with notes of black pepper and blackberries on the nose. The palate is generous and rich with a firm tannin structure and medium acidity. A pure expression of the Foxcroft Vineyard.
