modican mole shrimp with cumin potatoes, charred cabbage, rainbow peppers
Modica is a town in the southeastern part of Sicily known for its baroque architecture, dramatic views, and, certo, its chocolate. Here at Ssere, we make our mole exclusively with Modican chocolate. What makes this so unique? Modican chocolate is still made in the Aztecan way that it was when chocolate came to Sicily by way of the Spaniards in the 13th century, which is to say it's stone-ground and quite grainy with no emulsifiers added. This makes Modican chocolate super special, as it's barely processed or manipulated. We're pairing our modican mole with grilled wild shrimp and serving it with cumin-roasted potatoes, charred napa cabbage, seared rainbow peppers. *If you'd prefer this dish without the mole, please indicate in the notes. *If you'd like to swap the protein, please indicate in the notes.
