Rossmore Rock Oysters

Rossmore Rock Oysters start their life and come from a hatchery at about 2mm in size. They are then cared for in a nursery for 2 months, as they grow to about 8mm, when they are placed into mesh bags, where they are placed into the sea to grow. Once about 10-20g in size they are scattered onto the seabed, until they reach a market size of about 100g. They are very meaty and have a delicious taste of the sea. These are only available in Ireland, to collect from Mahon Point Farmers Market, Cork every Thursday, and Douglas Farmers Market every Saturday.
