From tea varieties and steeping methods to sweetness, fermentation, and packaging, nearly every part of the recipe was refined through repeated test batches to create an authentic hard iced tea that's approachable for homebrewers. One of the biggest surprises was tea cream, the natural haze that forms when real brewed tea is chilled. While commercial tea producers use specialized processing to minimize it, homebrewers have the advantage of letting time do much of the work. We also found that adding the crystallized lemon separately from the brewed tea reduced haze. We tested everything from premium loose-leaf teas to convenient tea bags, along with different steeping temperatures and times. In the end, the tea bags consistently delivered the best balance of authentic black tea flavor, repeatable results, and ease of brewing. Yeast selection received the same attention. While SafAle US-05 is exceptionally clean, its subtle peach and citrus esters became more noticeable in this light malt base. After repeated side-by-side trials, dry Lutra Kveik consistently produced the cleanest fermentation, allowing the brewed tea to remain the star of the recipe. Sweetening presented another challenge. Commercial hard teas are often pasteurized before being sweetened, but that isn't practical for most homebrewers. Instead, this kit includes a non-fermentable sucralose sweetener so you can adjust the sweetness after fermentation without restarting it. A small addition of East Kent Goldings contributes just 2 IBU, remaining virtually undetectable while providing an extra measure of protection for the finished beverage. Every ingredient and every step in this recipe reflects what we learned during development, so you can spend less time experimenting and more time enjoying your finished hard iced tea.
