Bobby's all-time favorite coffee. El Diviso is Nestor Lasso's family farm in Pitalito, Huila — a third-generation Colombian coffee operation in a region famous for pushing what specialty coffee can taste like. This is a Natural-processed Chiroso lot: fully dried in the cherry, then hulled, so the fruit sugars have weeks to work themselves into the bean. The result is what we can only describe as tropical Skittles. Passionfruit, guava, ripe stonefruit, a candy-sweet finish. Wild, unmistakable, closer to a fruit juice than a cup of coffee — in the best possible way. Why this coffee The Lasso family at El Diviso is one of the most exciting operations in Colombian specialty coffee right now. Their Chiroso lots — a long, thin, distinctive varietal — combined with careful natural processing produce the wildest, most tropical flavor profiles we've seen.
