Santa Maria Pinquito Bean

Small, firm, and deeply flavorful, Santa Maria Pinquitos are a California classic with a rich, savory broth and a long place in regional cooking. Traditionally served alongside Santa Maria-style barbecue, they are just as satisfying in meatless dishes. These beans hold their shape beautifully as they cook and need very little embellishment—just onion, garlic, a little fat, and time. Their hearty flavor makes them especially good in chili, baked beans, pot beans, salads, casseroles, and dips.
