Shoda Sustainable Soy Sauce 300ml is a naturally brewed (本醸造) Japanese soy sauce, made from water, defatted soybeans, wheat and salt and nothing else. Shoda bottles it under the Japanese name 責任ある大豆の醤油 — "soy sauce of responsible soybeans" — and in March 2023 the company became the first in Japan to obtain RTRS Chain of Custody certification for its soybean procurement. Brewed in Tatebayashi, Gunma, where Shoda has made soy sauce since 1873. This is the 300ml bottle. About Shoda Shoda Shoyu Co., Ltd. (正田醤油株式会社) has been brewing soy sauce in Tatebayashi, Gunma since 1873. Alongside its own branded range it runs a substantial OEM business producing soy sauce, soups and other oriental sauces for third parties, and owns a UK subsidiary, Shoda Sauces Europe Co., Ltd. in Wales. What "honjozo" and "responsible soy" mean Honjozo (本醸造) is the designation for soy sauce brewed the traditional way — a koji culture fermented and aged with soybeans, wheat and salt — as distinct from sauces produced by acid hydrolysis or blended from a chemically made base. RTRS, the Round Table on Responsible Soy Association, is a global multi-stakeholder body for responsible soy; its Chain of Custody standard certifies that a company can trace responsibly produced soybeans through its own supply chain.
