12-Minute Dinner

A complete pasta dinner in two jars, on the table in about twelve minutes. Borella's Traditional Bigoli is Venice's answer to spaghetti - thicker, rougher-surfaced, made from a softer wheat blend that gives it a fuller, more old-fashioned bite designed to hold onto something substantial. That something is Borella's Porcini Mushroom Sauce, which is 86% mushroom rather than a tomato base with mushroom flavouring stirred in - dense, earthy, and concentrated enough that a relatively small amount coats a full pot of pasta. Cook the bigoli to al dente, reserve a little pasta water, toss both together over low heat with a splash of that water to loosen the sauce, and finish with a drizzle of good olive oil.
