Free Range Chicken Cushion with Sage, Rosemary, and Thyme Sausage Meat Stuffing
Perfect for a Sunday roast, our chicken cushion is a whole chicken with all the bones removed, then wrapped around our mixed herb (sage, rosemary and thyme) sausage meat stuffing. A no fuss, roasting joint that is easy to carve with no waste. Brush the skin with olive oil, then roast in a preheated 200°C (fan 180°C) oven for 1 hour under foil. Finish uncovered for 30 -40 minutes until juices run clear. The internal temperature should be above 80. Rest for 15 minutes before slicing and serving.
