Bacchant (bac·chant) 1. A follower of Bacchus, the Roman god of wine. 2. A drunken reveller. Hand pruned and hand picked, this reserve Chardonnay was whole bunch pressed into new and two-year old French barriques, and left to wild yeast ferment. The wine elegantly delivers a sophisticated nose with a complex palate of white peach, citrus and biscuit cream tones. Drink now or until 2031. Alcohol 13.3% Previous vintages 2017 A complex bouquet, part ex fruit, part wild fermentation. Grapefruit is to the fore on the long palate, which is highly focused and disciplined. 96 pts. Halliday Wine Companion 2020 2015 A reserve style wine sourced from Mt Torrens estate fruit that's been picked early and handled gently, taking in the much loved modern techniques of whole bunches pressed into new and old French barrels where wild fermentation begins a journey to a complex mix of floral and fruit aromas, crunchy melon flavours dominating the palate, bright yet balanced acidity all backed by a tense chassis.
