In the mouth is full and round, persistent with a good tannic component. It is a classic pairing with roasted red and white meats, all the cheeses among which it prefers the "Pecorino di Pienza"Ageing/Vinification: Long-lasting maceration on the lees with intense and punching in the first stage, followed by a long-lasting static quiescent final stage. Temperature is controlled up to 30° C.
