A cured interpretation of traditional Spanish chorizo, packed with bold spices and dominated by the rich warmth of smoked paprika, with only minimal chilli. Eat it as is, or cook it—just use less than a recipe calls for, as dry-curing intensifies the flavour. Excellent with Manchego or any hard cheese, and naturally, with Sangria.
