The more delicate of Tscheppe's two Sauvignons - floral and less intense, with notes of elderflower and wild mint, and an almost velvety, harmonious texture. Hand-harvested and destemmed, the wine ferments spontaneously in old barrels and rests for 18 months before being bottled unfined and unfiltered. Precise, composed and quietly captivating. Working from a corner of his brother Ewald's cellar, he tends small parcels across several sites, crafting only white wines from Sauvignon, Chardonnay and two Muskatellers - some pressed, some skin-contact, all aged for extended periods in barrel. Farming is biodynamic, with the vitality of soil and ecosystem at the heart of everything; his vineyards are alive with flowers and insects, harvested entirely by hand with selection beginning among the vines to keep yields naturally low.
