Russian River Consecration is a highly acclaimed, Belgian-style dark wild ale aged in Cabernet Sauvignon barrels. Produced by California's Russian River Brewing Company, it is fermented with Brettanomyces, Lactobacillus, and Pediococcus, and aged with black currants for 4 to 8 months. The beer features a 10.0% ABV and pours a deep mahogany color. Tasting Notes: Tart and fruity with distinct notes of currants, dark chocolate, tobacco, spice, and a subtle oaky vanilla finish. Aroma: Complex funk from the wild yeast and bacteria combined with vinous, berry, and wine-like aromas from the Cabernet barrels.
